Instructions

  • Heat the vegetable oil in a large skillet or wok over high heat.
  • Cook for 5-6 minutes, or until the chicken strips are browned.
  • Stir in the minced garlic, ground ginger, and black pepper and cook for another minute.
  • Stir in the sliced carrots for 3-4 minutes, or until tender-crisp.
  • Stir in the cooked white rice and cook for another 2-3 minutes, or until heated through.
  • Stir in the soy sauce in the skillet to combine.
  • Cook for 1 minute more, stirring constantly, until the sauce has coated the chicken, rice, and vegetables evenly.
  • Remove from the heat and serve immediately.
