Beef and Noodle Stir Fry with Tomatoes and Carrots Recipe

This flavorful beef and noodle stir fry is a quick and easy dinner. In a savory sauce, tender beef slices are combined with tender rice noodles, sweet cherry tomatoes, and crunchy carrots.

Ingredients

Time Needed

  • Prep Time: 15 minutes
  • Cook Time: 10 minutes
  • Total Time: 25 minutes

Instructions

  • Cook the rice noodles according to the package directions.
  • Set aside after draining.
  • In a small mixing bowl, combine the soy sauce, cornstarch, sesame oil, and black pepper.
  • Place aside.
  • In a wok or large skillet, heat the vegetable oil over high heat.
  • Stir-fry the sliced flank steak for 1-2 minutes, or until browned.
  • Set aside after removing from the pan.
  • Stir-fry the onion and carrot in the same pan for 2-3 minutes, or until softened.
  • Stir in the minced garlic and cherry tomatoes for another 1-2 minutes, or until the tomatoes are slightly softened.
  • Pour in the sauce after adding the cooked noodles and reserved beef to the pan.
  • Stir-fry for another 1-2 minutes, or until the sauce is heated through and thickened.
  • Serve right away.
